1. Rinse and pat chicken dry then cut into 1 1/2 inch cubes
2. In a bowl whisk lemon juice olive oil garlic oregano salt pepper and zest
3. Add chicken to marinade and toss to coat evenly
4. Cover and refrigerate for 30 minutes up to overnight
5. Soak wooden skewers in water for 30 minutes if using
6. Thread chicken pieces onto skewers leaving small gaps
7. Preheat grill to medium high heat and clean grates
8. Grill skewers for 10 to 15 minutes turning every 3 to 4 minutes
9. Brush reserved marinade over skewers midway through grilling
10. Remove skewers and let rest for 5 minutes before serving
11. Garnish with chopped parsley and serve with lemon wedges
