Grilled Lemon Garlic Chicken Skewers for a Healthy Summer BBQ

These juicy, flavorful grilled lemon garlic chicken skewers are perfect for a healthy summer BBQ. Simple to prepare and packed with bright citrus and savory garlic flavors, they make a light yet satisfying main dish.


Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest (optional)
  • 3 cloves fresh garlic minced
  • 3 tbsp olive oil
  • 1 1/2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 8 wooden or metal skewers

  • Instructions

    1. Rinse and pat chicken dry then cut into 1 1/2 inch cubes

    2. In a bowl whisk lemon juice olive oil garlic oregano salt pepper and zest

    3. Add chicken to marinade and toss to coat evenly

    4. Cover and refrigerate for 30 minutes up to overnight

    5. Soak wooden skewers in water for 30 minutes if using

    6. Thread chicken pieces onto skewers leaving small gaps

    7. Preheat grill to medium high heat and clean grates

    8. Grill skewers for 10 to 15 minutes turning every 3 to 4 minutes

    9. Brush reserved marinade over skewers midway through grilling

    10. Remove skewers and let rest for 5 minutes before serving

    11. Garnish with chopped parsley and serve with lemon wedges
