1. Pat the zucchini rounds dry with a paper towel to remove excess moisture
2. In a small bowl whisk olive oil with salt, pepper, and garlic powder
3. Preheat grill or grill pan to medium-high heat and oil the grate
4. Sprinkle Parmesan cheese on top of each zucchini round
5. Place rounds cheese-side up on the grill and cook 2–3 minutes per side until golden and tender
6. In a bowl combine lemon juice, zest, and honey until well blended
7. Brush the lemon and honey glaze onto each round and grill one more minute
8. Transfer to a platter, garnish with chopped herbs, and serve immediately
