These cheesy ground beef enchiladas are perfectly portioned for two, combining seasoned beef, enchilada sauce, and melted cheese in a small casserole for an easy, comforting meal.

1. preheat oven to 375°F (190°C).
2. heat olive oil in a skillet over medium heat; add onion and cook until softened.
3. add garlic and cook 30 seconds until fragrant.
4. add ground beef, season with taco seasoning, salt, and pepper; cook until browned.
5. stir in ¾ cup enchilada sauce and remove from heat.
6. warm tortillas in a damp paper towel for 20 seconds to prevent tearing.
7. spoon beef mixture into each tortilla, sprinkle with cheese, roll up and place seam-side down in a small baking dish.
8. pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
9. bake for 18–22 minutes until cheese is melted and bubbly.
10. optionally broil for 1–2 minutes for browned cheese; let cool 5 minutes before serving.
