Description

Spooky red jello shots with lychee–blueberry eyeballs, easy to make boozy or kid-friendly—perfect for Halloween parties.


Ingredients

  • 1 (3 oz/85 g) box red Jell-O (cherry or strawberry)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1/2 cup vodka (or fruit juice/soda for non-alcoholic)
  • 20 canned lychees, drained
  • 20 blueberries or small candy eyeballs
  • 1 teaspoon grenadine or a few drops red food coloring (optional)
  • 20 clear 2-oz plastic shot cups

Instructions

1. In a bowl, dissolve gelatin in boiling water; stir 2 minutes.

2. Stir in cold water and vodka (or juice); let cool 5 minutes.

3. Set cups on a tray; fill each halfway with gelatin; chill 30–45 minutes until slightly set.

4. Press a blueberry into each lychee to form an eyeball; streak with grenadine/food coloring if desired.

5. Place one eyeball in each cup; top with more liquid gelatin to cover.

6. Refrigerate 2–3 hours until fully set.

7. Serve chilled; keep covered and refrigerated up to 3 days.
