2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
3. Mash the avocado with lemon juice, salt, and pepper until smooth with slight chunks.
4. Bring a small saucepan of water to a gentle simmer and add a dash of vinegar if desired.
5. Crack one egg into a small bowl, create a gentle whirlpool in the water, and slide the egg in. Poach for 3 minutes, then remove with a slotted spoon. Repeat with the second egg.
