Ingredients

  • 1 lb boneless skinless chicken breast, sliced
  • 3 cups fresh broccoli florets
  • 3 cups cooked white or brown rice
  • 2 tbsp olive oil or avocado oil
  • 34 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1/4 cup low-sodium chicken broth
  • 1 tsp honey or maple syrup
  • 1 tsp sesame seeds (optional)
  • 2 tbsp sliced green onions

  • Instructions

    1. Cook rice according to package instructions and keep warm.

    2. Slice chicken into thin strips and set aside.

    3. Rinse and cut broccoli into bite-sized florets.

    4. In a bowl, whisk together soy sauce, chicken broth, honey, and cornstarch mixture.

    5. Heat a wok or large skillet over medium-high heat and add oil.

    6. Add chicken in a single layer and stir-fry for 4–5 minutes until no longer pink; remove and set aside.

    7. Add garlic and ginger to the wok and sauté for 30 seconds until fragrant.

    8. Add broccoli, toss to coat, then add a splash of water and cover to steam 2–3 minutes until crisp-tender.

    9. Return chicken to the wok and pour in the sauce; stir constantly for 1–2 minutes until sauce thickens.

    10. Serve the chicken and broccoli mixture over rice and garnish with green onions and sesame seeds.
