A lightened-up take on classic chicken casserole using cauliflower rice and Greek yogurt for a creamy, cheesy finish. This easy bake is high in protein, low in carbs, and perfect for busy weeknights.

Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. If using fresh cauliflower, pulse in a food processor until rice-like and pat dry.
3. In a bowl combine Greek yogurt, chicken broth, garlic powder, onion powder, salt, pepper and half the cheese.
4. Stir shredded chicken and cauliflower rice into the sauce until evenly coated.
5. Transfer mixture to the baking dish and spread evenly.
6. Sprinkle remaining cheese over the top.
7. Bake for 25–30 minutes until cheese is bubbly and golden.
8. Let rest 5 minutes, garnish with parsley and serve.
