  • 3 cups cooked rice (day-old)
  • 1 cup diced chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon vegetable oil
  • 2 tablespoons chopped scallions

  • Instructions

    1. Chop vegetables and dice the chicken breast

    2. Heat vegetable oil in a wok or large skillet over medium-high heat

    3. Add diced chicken and cook until golden and cooked through

    4. Push chicken to the side and pour in beaten eggs, scramble until set

    5. Add garlic and ginger and stir for 30 seconds until fragrant

    6. Add mixed vegetables and stir-fry until tender
