1. Bring a large pot of salted water to a boil and cook penne pasta until al dente, then drain and rinse under cold water.
2. Shred or cube the cooked chicken and set aside.
3. Halve the cherry tomatoes, chop the greens if needed, and slice olives.
4. Whisk together pesto sauce, olive oil, and lemon juice in a small bowl.
5. In a large bowl, combine pasta, chicken, tomatoes, greens, and optional ingredients.
6. Pour dressing over the salad and gently toss until everything is evenly coated.
7. Season with salt and pepper and adjust lemon juice or cheese as desired.
8. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
