Ingredients

Scale
  • 1 lb lean beef (flank steak or sirloin), thinly sliced
  • 4 cups broccoli florets
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp cornstarch
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sesame oil
  • 1 tbsp avocado or vegetable oil
  • Cooked brown rice or cauliflower rice, for serving

  • Instructions

    1. Slice beef thinly against the grain and set aside.

    2. Blanch broccoli florets in boiling water for 1–2 minutes until bright green; drain and set aside.

    3. In a bowl, whisk soy sauce, honey, cornstarch, garlic, ginger, and 2 tbsp water to form the sauce.

    4. Heat avocado oil in a large skillet over medium-high heat. Add beef and stir-fry for 2–3 minutes until browned. Remove beef and set aside.

    5. Add sesame oil and broccoli to the skillet. Stir-fry for 3 minutes until tender-crisp.

    6. Return beef to the skillet and pour in sauce. Stir continuously for 2–3 minutes until sauce thickens and coats beef and broccoli.

    7. Serve hot over brown rice or cauliflower rice.
