1. Peel core and slice the apples into 1/4 inch thick pieces and toss with lemon juice.
2. Melt butter or coconut oil in a medium nonstick skillet over medium heat and stir in cinnamon and salt.
3. Add apple slices and cook uncovered for 5-7 minutes until they begin to soften and brown.
4. Drizzle with maple syrup or honey reduce heat to low cover and simmer for 5 minutes until apples are tender.
5. Stir in vanilla extract and cook uncovered for 1-2 minutes to thicken the syrup.
6. In a small bowl mix rolled oats with melted butter or oil maple syrup and cinnamon until clumped.
7. Toast the oat mixture in a dry skillet over medium heat for 3-4 minutes stirring continuously.
8. Divide the cooked apples among bowls and sprinkle the toasted oat crumble on top.
9. Serve warm with optional Greek yogurt almond butter or chopped nuts.
