  • 1 cup almond milk

  • Instructions

    1. In a bowl mash banana then whisk in egg, almond milk, honey, and vanilla extract.

    2. Add flour and baking powder and stir until batter is smooth.

    3. Heat a non-stick pan over medium heat and grease with coconut oil.

    4. Pour a large circle of batter for the bunny face and two smaller ovals above for ears.

    5. Cook until bubbles form and edges set, about 2–3 minutes, then flip and cook 2 more minutes.

    6. Transfer pancakes to a plate and use strawberries, blueberries, and banana slices to create eyes, nose, ears, and whiskers.
