1. Season the salmon fillets with salt, pepper, and olive oil.
2. Heat 1 tbsp olive oil in a skillet over medium-high heat.
3. Cook salmon skin-side down for 4–5 minutes, flip and cook 3–4 minutes more, then remove and keep warm.
4. Heat 1 tbsp olive oil in a saucepan over medium heat.
5. Sauté garlic for 30 seconds, add orzo and toast for 1–2 minutes.
6. Add broth and wine, simmer for 8–9 minutes until orzo is al dente.
7. Stir in spinach, lemon zest, and lemon juice, then season to taste.
8. Nestle salmon fillets into the orzo mixture and garnish with parsley and feta.
9. Serve warm.
