1. Pat chicken dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear chicken 4–5 minutes per side until golden and cooked through, then transfer to a plate.
3. Reduce heat to medium, add butter and garlic to the skillet, and sauté for 30 seconds.
4. Add zucchini and cook 3–4 minutes until slightly crisp and caramelized.
5. Stir in corn and cook 2–3 minutes until tender.
6. Return chicken to the skillet and spoon vegetables and sauce over it for 1–2 minutes.
7. Finish with parsley, optional lemon juice, red pepper flakes, or parmesan, and serve hot from the skillet.
