Healthy Greek Yogurt Spinach Artichoke Dip

Description

This creamy spinach and artichoke dip uses Greek yogurt for a protein-rich, lighter alternative to traditional versions. It can be served cold or baked for a golden, bubbly appetizer.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup marinated artichoke hearts, drained and chopped
  • 1 cup plain low-fat Greek yogurt
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • salt and pepper to taste

  • Instructions

    1. preheat oven to 375°F (190°C) if baking

    2. if using fresh spinach, sauté in olive oil until wilted; if frozen, thaw and drain

    3. in a bowl, mix Greek yogurt and cream cheese until smooth

    4. stir in garlic, lemon juice, Parmesan, mozzarella, salt, and pepper

    5. fold in spinach and artichokes until evenly combined

    6. for cold dip, chill for at least 30 minutes before serving

    7. for baked dip, transfer to a greased dish, top with extra cheese, and bake 20-25 minutes until golden

    8. serve with vegetables, crackers, or pita chips
