bbq chicken and stuffed pepper lettuce wraps

Description

These lettuce wraps combine smoky barbecue chicken with colorful stuffed pepper flavors for a fresh, low carb meal. Crisp lettuce leaves hold seasoned chicken, sautéed peppers, and vibrant toppings for a satisfying lunch or light dinner.

  • 2 boneless skinless chicken breasts cut into bite sized pieces
  • 2 tablespoons olive oil
  • 1/2 cup barbecue sauce (low sugar)
  • 1 head romaine or butter lettuce leaves separated and washed
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup thinly sliced red onion
  • 1/2 cup shredded cabbage or grated carrots
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 small avocado diced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • dash of garlic powder

  • Instructions

    1. toss chicken pieces with olive oil sea salt paprika and black pepper

    2. heat a skillet over medium high heat and add the chicken

    3. cook until lightly charred and cooked through about 5 to 7 minutes per side

    4. reduce heat and stir in barbecue sauce simmering until sauce thickens

    5. arrange lettuce leaves on a platter

    6. top each leaf with bbq chicken peppers onion cabbage and avocado

    7. drizzle lime juice and sprinkle cilantro over the filling

    8. fold lettuce around the filling and serve immediately
