Description

These high-protein chicken burrito bowls are a balanced meal prep solution packed with lean protein, fiber-rich beans, and whole grains. Ready in under 30 minutes using an Instant Pot, they keep well in the fridge for quick lunches all week.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 cup brown rice rinsed
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1.5 cups chicken broth
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • salt and pepper to taste
  • juice of 1 lime
  • optional toppings chopped cilantro diced avocado shredded cheese

  • Instructions

    1. Add chicken, rice, beans, corn, tomatoes, spices, and broth to the Instant Pot.

    2. Seal and cook on high pressure for 10 minutes, then allow a natural release for 10 minutes.

    3. Remove chicken and shred with two forks.

    4. Stir shredded chicken back into the mixture along with lime juice.

    5. Portion into containers and top with cilantro, avocado, or cheese as desired.

    6. Refrigerate for up to four days and reheat with a splash of broth to restore moisture.
