Description

Soft, chewy oatmeal cookies made with pumpkin puree, whole wheat flour, rolled oats, warm spices, and dark chocolate chips. Naturally sweetened with maple syrup or honey, these wholesome fall treats are perfect for snacks, desserts, or holiday gatherings.

  • 1 cup pumpkin puree
  • 1 1/2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup dark chocolate chips

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2. In a medium bowl, whisk together pumpkin puree, maple syrup, melted coconut oil, egg, and vanilla extract.

    3. In another bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, nutmeg, ginger, and salt.

    4. Fold the dry ingredients into the wet ingredients until just combined.

    5. Gently stir in dark chocolate chips, reserving a few to sprinkle on top.

    6. Use a spoon or cookie scoop to drop 18 even portions of dough onto the baking sheet, flattening slightly.

    7. Bake for 12–15 minutes, until edges are lightly golden and centers are set.

    8. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
