Healthy Raspberry Crumble Bars

Description

These wholesome bars combine a golden oat crumble with a juicy raspberry filling for a balanced breakfast or brunch treat. They’re easy to make, naturally sweetened, and perfect for grab-and-go mornings.


Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 cups fresh raspberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • pinch of salt

  • Instructions

    1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

    2. In a bowl, mix rolled oats, whole wheat flour and salt.

    3. In another bowl, whisk melted coconut oil with honey or maple syrup and vanilla extract.

    4. Combine wet and dry ingredients to form a crumbly dough.

    5. Press two thirds of the dough into the bottom of the prepared pan.

    6. Scatter raspberries over the crust and drizzle with lemon juice.

    7. Crumble the remaining dough over the berry layer.

    8. Bake for 25 to 30 minutes until the top is golden brown.

    9. Allow to cool completely in the pan before lifting out and slicing into 16 bars.

    10. Store in an airtight container at room temperature for up to five days.
