1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss squash slices with olive oil, garlic powder, salt, and pepper until evenly coated.
3. Arrange squash slices in a single layer on the prepared baking sheet, avoiding overlap.
4. Sprinkle grated parmesan evenly over the squash slices.
5. Roast in the preheated oven for 20–25 minutes, flipping slices halfway through, until edges are golden and cheese is crisp.
6. Remove from oven and let rest for 2–3 minutes.
7. Garnish with chopped fresh parsley if desired and serve warm.
