1. Mix taco spice blend and rub onto chicken breast.
2. Grill or pan-sear chicken until cooked through, then dice.
3. Whisk Greek yogurt, lime juice, chipotle powder, honey, olive oil, and salt to make dressing.
4. Divide dressing evenly among six quart jars as the bottom layer.
5. Add black beans, corn, and chopped bell peppers on top of dressing.
