  • 1 can (15 oz) chickpeas drained and rinsed
  • 2 medium sweet potatoes peeled and cubed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon chili flakes optional
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • salt and pepper to taste
  • fresh cilantro chopped for garnish
  • lime wedges for serving

  • Instructions

    1. Heat oil in a large skillet or Dutch oven over medium heat

    2. Add onion, garlic, and ginger and sauté until fragrant and translucent

    3. Stir in curry powder, cumin, turmeric, coriander, and chili flakes and cook for 1 minute

    4. Add chicken pieces and cook until no longer pink on the outside

    5. Pour in diced tomatoes, coconut milk, and chicken broth and stir to combine

    6. Add sweet potatoes and chickpeas, bring to a simmer, then reduce heat to low and cover

    7. Cook for 25-30 minutes or until sweet potatoes are tender and sauce has thickened

    8. Season with salt and pepper, garnish with cilantro, and serve with lime wedges
