Description
A comforting slow cooker stew with chicken thighs and autumn vegetables simmered in savory broth. Perfect for busy weeknights and makes 6 hearty servings.

Instructions
1. Prepare ingredients by washing and chopping vegetables and seasoning chicken
2. Optionally sear chicken in olive oil until browned and transfer to slow cooker
3. Layer potatoes and carrots in bottom of slow cooker followed by celery, onion and garlic, then chicken
4. Add broth, thyme, bay leaves and season with salt and pepper
5. Cook on low for 7–8 hours or high for 3½–4 hours until chicken is tender
6. Stir in corn and peas about 20 minutes before end of cooking
7. Remove bay leaves and thyme stems before serving
8. Garnish with parsley and serve warm
