1. Heat olive oil in a large stockpot over medium heat and sear chicken breasts 2 to 3 minutes per side until lightly golden
2. Remove chicken and set aside; in the same pot, sauté onion, garlic, and bell pepper until softened
3. Stir in taco seasoning and toast for 30 seconds
4. Add crushed tomatoes and chicken broth, stirring to combine
5. Return chicken to the pot, reduce heat to a simmer, cover, and cook 20 minutes until chicken is cooked through
6. Remove chicken, shred with two forks, and return to the soup
7. Add black beans and corn and simmer 10 more minutes
8. Stir in lime juice and cilantro; whisk in Greek yogurt if using
