1. Preheat the oven to 200°C (400°F).
2. Melt the butter in a small saucepan over low heat, then add minced garlic, half the parsley, lemon zest, salt, and pepper and cook until fragrant.
3. Arrange the chicken breasts in the center of a large baking tray and scatter mixed vegetables around them.
4. Brush the chicken and vegetables with the garlic butter mixture, drizzle with olive oil, and squeeze over lemon juice.
5. Tuck lemon slices around the chicken and roast for 30 minutes or until the internal temperature reaches 75°C (165°F), basting halfway through.
6. Remove from the oven and let rest for 5 minutes, then sprinkle with remaining parsley and basil before serving.
