Herb Roasted Lemon Chicken Tray Bake with Garlic Butter and Fresh Parsley

Description

This tray bake combines juicy chicken breasts with lemon, garlic butter, and fresh herbs for a simple, flavorful family dinner. It requires minimal prep and uses one pan for an easy, aromatic meal.

  • 4 boneless skinless chicken breasts (around 150g each)
  • 1 large lemon, zested and juiced
  • 80g unsalted butter
  • 4 cloves garlic, minced
  • 3 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil or thyme, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper, cracked
  • 2 cups mixed vegetables (potatoes, carrots, green beans)

  • Instructions

    1. Preheat the oven to 200°C (400°F).

    2. Melt the butter in a small saucepan over low heat, then add minced garlic, half the parsley, lemon zest, salt, and pepper and cook until fragrant.

    3. Arrange the chicken breasts in the center of a large baking tray and scatter mixed vegetables around them.

    4. Brush the chicken and vegetables with the garlic butter mixture, drizzle with olive oil, and squeeze over lemon juice.

    5. Tuck lemon slices around the chicken and roast for 30 minutes or until the internal temperature reaches 75°C (165°F), basting halfway through.

    6. Remove from the oven and let rest for 5 minutes, then sprinkle with remaining parsley and basil before serving.
