1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with liners.
2. In a large bowl, mash the ripe bananas until smooth.
3. Add eggs, greek yogurt, honey or maple syrup, and melted coconut oil to the mashed bananas and whisk until combined.
4. In a separate bowl, whisk together whole wheat flour, rolled oats, protein powder, cocoa powder, baking powder, baking soda, and salt.
5. Gently fold the dry ingredients into the wet mixture until just combined.
6. Stir in the dark chocolate chips.
7. Divide the batter evenly among the muffin cups, filling each about three quarters full.
8. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
9. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
10. Store in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
