Ingredients

  • 1 cup pumpkin puree
  • 1 cup almond flour
  • 1 cup whey protein powder
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 2 tablespoons pumpkin seeds

  • Instructions

    1. Preheat oven to 350°F (175°C) and prepare a loaf pan

    2. In a bowl whisk almond flour protein powder baking powder baking soda and spices

    3. In another bowl mix pumpkin puree Greek yogurt eggs coconut oil and maple syrup

    4. Fold wet ingredients into dry until just combined

    5. Pour batter into loaf pan and sprinkle pumpkin seeds on top

    6. Bake for 45 minutes or until a toothpick comes out clean

    7. Cool in pan 10 minutes then transfer to a wire rack to cool completely
