  • 2 cups leftover chicken shredded or cubed
  • 1 medium sweet potato diced
  • 1 large bell pepper diced
  • 1 small onion diced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup spinach optional
  • 1 teaspoon thyme or rosemary fresh or dried
  • salt and pepper to taste

  • Instructions

    2. Add onion and garlic and sauté until fragrant and translucent

    3. Add diced sweet potato and stir occasionally until lightly browned and tender

    4. Stir in bell pepper and cook until softened
