1. Wash and grate zucchini; sprinkle with a pinch of salt and let drain for 10 minutes, then squeeze out excess moisture.
2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In another bowl, beat eggs with oil and vanilla extract until combined.
4. Add wet ingredients to the dry ingredients and stir until just combined.
5. Gently fold in the drained zucchini and shredded cheese if using.
6. Lightly grease the bread machine pan and pour in the batter.
7. Select the Quick Bread or Cake setting on your bread machine and choose the 1.5 lb loaf size.
8. Start the machine and let it mix and bake (about 60–90 minutes).
9. When the cycle finishes, remove the pan and insert a toothpick into the center; if it comes out clean, the bread is done.
10. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
