  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup diced carrots
  • 1 cup frozen peas
  • 1 cup diced potatoes
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 stick cold unsalted butter cubed
  • 3/4 cup buttermilk

  • Instructions

    1. Preheat oven to 400°F

    2. In a skillet melt butter and olive oil, sauté onion garlic and carrots until tender

    3. Stir in flour and cook 1 minute

    4. Gradually whisk in broth and milk until sauce thickens

    5. Add chicken peas potatoes thyme salt and pepper and cook until heated

    6. Transfer filling to a greased 9×13 inch dish

    7. In a bowl combine flour baking powder and salt, cut in butter until crumbly

    8. Stir in buttermilk until dough forms

    9. Pat or drop biscuit dough over filling

    10. Bake 25–30 minutes until biscuits are golden and filling bubbles

    11. Let rest 5 minutes before serving
