Description

These honey mustard chicken meal prep bowls combine marinated chicken, roasted sweet potatoes, grains, and fresh greens for a balanced and flavorful weekly lunch. Inspired by Sweetgreen’s honey chicken bowl, they are easy to assemble and stay fresh for up to four days.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 1.5 tbsp honey
  • 1 tsp apple cider vinegar
  • 0.5 tsp minced garlic
  • 2 medium sweet potatoes diced
  • 1 cup cooked brown rice or quinoa
  • 4 cups mixed greens (arugula kale spinach)
  • 0.5 cup chopped cucumber
  • 0.25 cup pickled red onions
  • 1 avocado sliced (optional)
  • 0.5 tsp chili flakes (optional)
  • salt and black pepper to taste

  • Instructions

    1. Whisk olive oil Dijon mustard honey vinegar garlic salt and pepper in a bowl and toss chicken until coated then marinate at least 30 minutes.

    2. Preheat oven to 425°F line a sheet pan with parchment paper toss sweet potatoes with olive oil salt and chili flakes and roast 25 to 30 minutes flipping halfway.

    3. Preheat oven to 400°F or heat a skillet to medium-high and cook marinated chicken until internal temperature reaches 165°F about 18 to 20 minutes in oven or 5 to 6 minutes per side in skillet then rest 5 minutes before slicing.

    4. Divide cooked rice or quinoa among four containers then add roasted sweet potatoes followed by mixed greens cucumbers pickled onions and avocado slices.

    5. Top with sliced honey mustard chicken and pack dressing separately to keep greens crisp then seal containers and refrigerate up to four days.
