Chicken Quinoa Bake with Broccoli

Description

This wholesome casserole combines protein-rich chicken and quinoa with tender broccoli in a creamy cheese sauce. It’s an easy, nutritious bake perfect for busy weeknights or meal prep.


Ingredients

  • 1 cup uncooked quinoa
  • 2 cups chicken broth or water
  • 2 large cooked chicken breasts, shredded
  • 3 cups broccoli florets, lightly steamed
  • 3/4 cup Greek yogurt
  • 1 1/2 cups shredded mozzarella and cheddar cheese blend
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • salt and pepper to taste

  • Instructions

    1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.

    2. Cook quinoa in broth or water according to package instructions until fluffy, about 15 minutes, then fluff with a fork.

    3. In a bowl whisk Greek yogurt, garlic, onion powder, olive oil, salt and pepper, then fold in half of the shredded cheese.

    4. Combine cooked quinoa, shredded chicken, steamed broccoli and sauce mixture in a large bowl and transfer evenly into the prepared dish.

    5. Sprinkle remaining cheese on top and bake uncovered for 20–25 minutes until golden and bubbly. Let rest 5 minutes before serving.
