2. In a large bowl, toss squash cubes with olive oil, brown sugar, salt, and optional cinnamon or nutmeg until evenly coated.
3. Arrange cubes in a single layer on a rimmed baking sheet lined with parchment paper, leaving space between pieces.
4. Roast for 25–30 minutes, flipping halfway through, until edges are golden brown and squash is fork-tender.
5. Remove from oven and serve warm as a side dish or toss into salads and grain bowls.
