Description

Golden cubes of tender butternut squash coated in brown sugar and olive oil, roasted to caramelized perfection for a sweet and savory side dish.

  • 1 medium butternut squash (3 lbs), peeled, seeded, and cut into 1-inch cubes
  • 23 tablespoons brown sugar
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon or nutmeg (optional)

  • Instructions

    1. Preheat oven to 400°F (200°C).

    2. In a large bowl, toss squash cubes with olive oil, brown sugar, salt, and optional cinnamon or nutmeg until evenly coated.

    3. Arrange cubes in a single layer on a rimmed baking sheet lined with parchment paper, leaving space between pieces.

    4. Roast for 25–30 minutes, flipping halfway through, until edges are golden brown and squash is fork-tender.

    5. Remove from oven and serve warm as a side dish or toss into salads and grain bowls.
