Instructions
1. Heat olive oil in a large pot over medium heat and sauté onion until translucent.
2. Add garlic and grated ginger and stir until fragrant.
3. Add carrots, celery and poblano pepper and cook for a few minutes.
4. Place chicken breasts in the pot and sear briefly on each side.
5. Pour in chicken broth, turmeric, salt and pepper and bring to a boil.
6. Reduce heat and simmer for 25–30 minutes until chicken is cooked through.
7. Remove chicken, shred with forks and return to the pot.
8. Stir in lime juice and adjust seasoning.
9. Finish by stirring in fresh cilantro before serving.
