1. Preheat oven to 425°F and butter two 6-ounce ramekins, then dust with cocoa powder
2. Melt chocolate and butter together until smooth using a double boiler or microwave
3. Whisk egg, egg yolk, sugar, and vanilla until pale and slightly thickened
4. Slowly pour melted chocolate into the egg mixture, whisking constantly
5. Sift flour and salt over the mixture and fold gently until just combined
6. Divide batter between ramekins, filling three-quarters full and adding optional filling if desired
7. Bake for 11–13 minutes until edges are set and centers remain soft
8. Let cakes rest for 1 minute, run a knife around edges, and invert onto plates
