Description

These burrito bowls combine tender protein, rice, beans, and fresh toppings for a quick, flavorful weeknight meal made entirely in the Instant Pot.


Ingredients

  • 1 cup white rice, rinsed
  • 1 pound chicken breast, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • optional toppings: cheese, salsa, avocado, sour cream

  • Instructions

    1. Set Instant Pot to Sauté and heat olive oil.

    2. Add diced chicken, season with chili powder, cumin, smoked paprika, salt, and pepper, and sauté for 2 minutes.

    3. Stir in rice, black beans, corn, diced tomatoes, and chicken broth without stirring after adding liquid.

    4. Close lid, set valve to Sealing, and cook on High Pressure for 10 minutes.

    5. Allow a 10-minute natural release, then quick release remaining pressure.

    6. Open lid, stir in lime juice and cilantro, and serve with desired toppings.
