This creamy Instant Pot Chicken Tikka Masala with Coconut Milk delivers bold spices and tender chicken in under an hour. It’s a simple weeknight comfort meal that combines authentic flavor with modern convenience.


Ingredients

  • 2 lbs boneless skinless chicken thighs cut into chunks
  • 1 large onion finely chopped
  • 4 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 1 1/2 cups tomato puree or crushed tomatoes
  • 1 cup full fat coconut milk
  • 2 tbsp olive oil or ghee
  • 1 1/2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika or mild chili powder
  • 1/2 tsp turmeric
  • salt to taste
  • 1 tbsp lemon juice
  • fresh cilantro for garnish

  • Instructions

    1. Set Instant Pot to Sauté and heat olive oil or ghee

    2. Add chopped onion and cook until golden brown

    3. Stir in garlic and ginger and cook until fragrant

    4. Add garam masala cumin coriander paprika turmeric and salt and toast for 30 seconds

    5. Pour in tomato puree and scrape bottom to deglaze

    6. Add chicken pieces and a splash of water or broth

    7. Seal lid and cook on high pressure for 8 minutes

    8. Allow natural release for 5 minutes then quick release remaining pressure

    9. Switch to Sauté Low and stir in coconut milk

    10. Simmer until sauce thickens slightly then stir in lemon juice

    11. Garnish with cilantro and serve over rice or with naan
