1. Pat chicken dry and cut into even chunks
2. Select Sauté mode and melt butter or heat oil
3. Cook onion for 2–3 minutes until translucent then add garlic and stir for 30 seconds
4. Add chicken, season with salt pepper thyme and parsley, and sear for 2 minutes per side
5. Pour a splash of broth and scrape bottom to deglaze and prevent burn notice
6. Add rice and remaining broth, do not stir, spread rice evenly and seal lid
7. Pressure Cook on high for 10 minutes then allow natural release for 10 minutes
8. Open lid, stir in cream and Parmesan, switch to Sauté for 1–2 minutes until sauce thickens, then adjust seasoning and stir in lemon juice if using
