Description

  • 1.5 lbs boneless skinless chicken thighs
  • 3 carrots, sliced
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 1 cup green beans, trimmed
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1.5 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp cornstarch (optional)
  • fresh parsley for garnish

  • Instructions

    1. Wash and chop all vegetables into bite-sized pieces and pat chicken dry.

    2. Select Sauté on the Instant Pot and heat olive oil.

    3. Season chicken with salt and pepper and brown for 2–3 minutes per side.

    4. Remove chicken and add onion, garlic, and celery to the pot; sauté 2–3 minutes.

    5. Deglaze with a few tablespoons of chicken broth, scraping up browned bits.

    6. Return chicken and add carrots, potatoes, green beans, thyme, rosemary, remaining broth, salt, and pepper.

    7. Secure lid, set valve to Sealing, and cook on high pressure for 8 minutes.

    8. Quick release pressure by turning valve to Venting when cooking completes.

    9. Optional: switch to Sauté, stir cornstarch with water, add and simmer until sauce thickens.

    10. Garnish with fresh parsley and serve warm.
