3. Close and seal the Instant Pot lid and pressure cook on high for 12 minutes for fresh chicken or 15 minutes for frozen
4. Allow natural pressure release for 8 to 10 minutes then release any remaining pressure
5. Add cubed cream cheese to the pot and stir until the sauce is smooth and creamy
6. Remove the chicken and shred with forks then return it to the pot and mix to coat with sauce
7. Adjust seasoning with salt pepper or lime juice as desired
8. Garnish with fresh cilantro and serve over cauliflower rice lettuce wraps or your preferred low carb side
