A classic Southern-style squash casserole with layers of tender yellow squash, creamy cheese filling, and a buttery cracker topping. Perfect for family dinners, potlucks, and holiday gatherings.

1. Preheat oven to 350°F (175°C).
2. In a large skillet, melt 1 tablespoon butter over medium heat. Add sliced squash and chopped onion, sauté for 8–10 minutes until tender and most moisture has evaporated.
3. In a mixing bowl, whisk together eggs, sour cream, shredded cheese, salt, and pepper until smooth.
4. Fold the sautéed squash and onions into the creamy mixture.
5. Grease a 9×13-inch casserole dish and pour in the squash mixture, spreading evenly.
6. In a small bowl, combine crushed crackers (or breadcrumbs) with melted butter. Sprinkle evenly over the top of the casserole.
7. Bake for 25–30 minutes, until the casserole is bubbly and the topping is golden brown.
8. Let rest for 5 minutes before serving.
