  • 2 large boneless skinless chicken breasts (about 1 lb total)
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • fresh parsley or cilantro for garnish

  • Instructions

    1. preheat oven to 425°F (220°C) and grease a baking dish

    2. in a bowl whisk olive oil lemon juice garlic powder smoked paprika oregano salt and pepper

    3. add chicken breasts and coat evenly then let sit 5–10 minutes

    4. place chicken in dish and bake uncovered for 18–22 minutes until internal temperature reaches 165°F (74°C)

    5. remove and tent with foil let rest for 5 minutes

    6. slice against the grain garnish with parsley or cilantro and serve
