Keto Cauliflower Mashed Potatoes With Cream Cheese

Description

A creamy, low-carb alternative to traditional mashed potatoes made with cauliflower and cream cheese. This simple side is fast to prepare, uses frozen or fresh florets, and pairs perfectly with any main dish.


Ingredients

  • 1 large head cauliflower or 2 12 oz bags frozen cauliflower florets
  • 4 oz cream cheese
  • 2 tablespoons butter
  • 12 cloves garlic or 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • optional chopped chives or parsley for garnish

  • Instructions

    1. Bring a pot of salted water to a boil or set up a steamer basket over simmering water.

    2. Cook cauliflower florets until very tender, about 10 minutes for fresh or 8 minutes for frozen.

    3. Drain cauliflower well and pat dry with paper towels to remove excess moisture.

    4. Transfer cauliflower to a food processor or blender and add cream cheese, butter, garlic, salt, and pepper.

    5. Blend until smooth and creamy, scraping down sides as needed.

    6. Taste and adjust seasoning with extra salt or butter if desired.

    7. Spoon mash into a serving dish and garnish with chopped chives or parsley.

    8. Serve immediately alongside your favorite protein or vegetable.
