1. Bring a pot of salted water to a boil or set up a steamer basket over simmering water.
2. Cook cauliflower florets until very tender, about 10 minutes for fresh or 8 minutes for frozen.
3. Drain cauliflower well and pat dry with paper towels to remove excess moisture.
4. Transfer cauliflower to a food processor or blender and add cream cheese, butter, garlic, salt, and pepper.
5. Blend until smooth and creamy, scraping down sides as needed.
6. Taste and adjust seasoning with extra salt or butter if desired.
7. Spoon mash into a serving dish and garnish with chopped chives or parsley.
8. Serve immediately alongside your favorite protein or vegetable.
