Description

This fresh summer salad combines juicy grilled chicken, ripe cherry tomatoes, creamy mozzarella, and fragrant basil, all drizzled with a keto-friendly balsamic dressing. It’s a light yet satisfying dinner perfect for low-carb lifestyles.


Ingredients

  • 2 boneless skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 8 oz fresh mozzarella
  • 1½ cups cherry tomatoes halved
  • ½ cup fresh basil leaves
  • salt to taste
  • black pepper to taste

  • Instructions

    1. In a bowl whisk 1½ tbsp olive oil, 1 tbsp balsamic vinegar, garlic, salt, and pepper. Marinate chicken for 20-30 minutes.

    2. Preheat grill or grill pan over medium-high heat and brush with oil. Grill chicken 5-7 minutes per side until 165°F. Rest 5 minutes and slice.

    3. Whisk remaining olive oil and balsamic vinegar with salt and pepper to make dressing, or use a low-carb balsamic glaze.

    4. On a platter layer basil leaves, cherry tomatoes, and mozzarella. Top with sliced chicken.

    5. Drizzle with balsamic dressing, garnish with basil, and serve immediately.
