1. Preheat oven to 375°F (190°C) and grease a cast iron skillet or oven-safe dish.
2. Pat chicken dry and season with salt, pepper and Italian seasoning.
3. Heat oil in skillet over medium-high heat and sear chicken 3–4 minutes per side until golden. Remove and set aside.
4. Reduce heat to medium, add butter and garlic; cook 30 seconds until fragrant.
5. Add mushrooms and cook 5–6 minutes until browned.
6. Pour in chicken broth and heavy cream, whisking to combine; simmer 2–3 minutes until slightly thickened.
7. Stir in half of the mozzarella and all Parmesan cheese, then taste and adjust seasoning.
8. Nestle chicken into sauce, spoon mushrooms over top, and sprinkle remaining mozzarella.
9. Bake uncovered 20–25 minutes until chicken reaches 165°F (74°C) and cheese is golden.
10. Let rest 5 minutes, garnish with parsley and serve.
