1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, stir together chicken, cranberry sauce, and BBQ sauce until well coated.
3. Fold in sour cream, cooked rice or stuffing, chopped onion, herbs, salt, and pepper.
4. Spread half of the mixture into the prepared dish and sprinkle with half of the cheese.
5. Top with the remaining chicken mixture, then sprinkle the rest of the cheese evenly.
6. If using, combine melted butter with crushed crackers or breadcrumbs and sprinkle over the top.
7. Bake uncovered for 30 minutes or until cheese is bubbling and topping is golden. Let rest 5–10 minutes before serving.
