  • 3 cups shredded leftover turkey
  • 8 cups turkey or chicken broth
  • 2 cups uncooked egg noodles
  • 2 medium carrots sliced
  • 2 stalks celery sliced
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 tablespoons butter or olive oil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

  • Instructions

    1. Heat butter or oil in a large pot over medium heat.

    2. Add onion and cook until translucent, about 3–4 minutes.

    3. Stir in garlic, carrots, and celery and sauté for 5 minutes.
