  • 1 scoop vanilla protein powder
  • 2 large eggs
  • 1.5 cups oat flour
  • 1.5 teaspoons baking powder
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons olive oil or coconut oil

  • Instructions

    1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.

    2. Blend cottage cheese, eggs, protein powder, honey, lemon juice, lemon zest, vanilla extract, and oil until smooth.

    3. In a bowl, whisk together oat flour and baking powder.

    4. Pour blended mixture into dry ingredients and fold until just combined.

    5. Toss blueberries in a little flour and gently fold into the batter.

    6. Divide batter among muffin cups, filling each three-quarters full.
