This quick and flavorful one-pan meal features juicy chicken breasts and crisp asparagus tossed in a zesty garlic butter lemon sauce. It’s a healthy, easy weeknight dinner inspired by popular Hello Fresh copycat recipes.


Ingredients

  • 2 large chicken breasts, boneless, skinless
  • 1 bunch asparagus, trimmed
  • 3 cloves garlic, minced
  • 1 large lemon, juiced and zested
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp grated Parmesan (optional)
  • salt and pepper to taste

  • Instructions

    1. pat chicken dry and season with salt and pepper

    2. heat olive oil in skillet over medium-high heat and sear chicken until golden and cooked through then remove and keep warm

    3. in the same skillet add butter and asparagus and sauté until bright green and crisp-tender then remove

    4. melt remaining butter and cook garlic until fragrant then pour in chicken broth and simmer to create a sauce

    5. stir in lemon juice and zest off heat

    6. return chicken and asparagus to skillet and toss to coat in sauce

    7. garnish with Parmesan if desired and serve immediately
