  • 2 lemons zested and juiced
  • 4 garlic cloves minced

  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 2 cups cooked brown rice
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 2 cups baby spinach
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese optional
  • salt to taste

  • Instructions

    1. Whisk together lemon juice, lemon zest, olive oil, garlic, honey, oregano, salt, and pepper in a bowl and add the chicken to marinate for at least 30 minutes.

    2. Preheat a grill or grill pan over medium-high heat and cook chicken for 5 to 6 minutes per side until internal temperature reaches 165°F.

    3. Let the chicken rest, then slice into strips once cooled slightly.
